    With an hour, I was making Vanilla Bean Ice Cream with Dry Ice on Facebook Live. That’s right! We don’t mess around when it comes to ice cream and the opportunity to try something new. Instead of cane sugar, I use KetoLuxe Allulose in my recipe. There is no need to sacrifice taste for your waist.

    Now that we eat keto, I had to revise the recipe to be low carb. There was no way I was going to live without my favorite condiment. I swap out yogurt with all natural sour cream to knock out those carbs. This recipe is gluten-free, sugar-free, and delicious. To me, the best flavor is when the Tzatziki is made the day before, making it a perfect party or meal prep food. 
  • KETO CRUDITES WITH RANCH DIP

    Especially with the keto way of eating, raw vegetables and dip are an important part of a healthy celebration. The tasty combination of fat, nutrients, and fiber help keep us fit and satisfied. The only problem with our old way of making Crudités with Ranch Dip is that many of the dips contain fillers and stabilizers. Sugars, guar gum, and other fillers just don’t fit into it. That’s why I created my KetoLuxe Ranch Seasoning Blend (the secret ingredient in this dish) to be free from them and to be soy free, gluten free, and grain free.

    Eating keto, there is a lot of fat. A vinegary dressing really works to cut through the heaviness of it. My German Radish Salad is a riff on the classic potato salad to cut carbs.     Eating keto means eschewing artificial flavors and refined sugars. Did that mean I would have to forgo Pralines and Cream Ice Cream for my birthday? Heck no! That’s right. I created my own sugar free, gluten free, low carb ice cream recipe to celebrate. Finally, even the Mother approved of my birthday dessert. She insisted upon finishing up the lone scoop (Sam was barely able to take any pictures before it was snatched away and gobbled up). I must admit, as an adult, I prefer the grown-up flavors of this. However, piece of my heart will always be held by the bunny cakes my Granny Z picked up for me. This is the best of both worlds.
  • KETO THAI SHRIMP AND NOODLES

    When Sam and I started eating keto, I went into Thai food withdrawal pretty quickly. My taste buds jonesed for the complex flavors and slippery texture. I created Thai Noodles and Shrimp because of my longing for this type of food. In the recipe, I substitute shirataki noodles for the rice noodles, fiber syrup for the honey, and liquid aminos for the soy sauce. Finally, I could get my fix!

    For low carb and keto cooking, fresh herbs can transform a recipe from good to fabulous. There’s nothing like the flavor of them. My Summer Salad with Mint uses local produce and simple ingredients to be deliciously sugar free and gluten free. While it could be made in the winter, tomatoes and cucumber taste best when farm fresh (at least, here in Indiana).

    Now the we eat keto, we skip restaurant Teriyaki Sauce because of the soy, sugars, and gluten. After about a year of not having any, I got fed up. That’s when I started researching and experimenting with my own low carb, gluten free, and sugar free recipe. Allulose and liquid aminos to the rescue! Last night, I marinated and grilled pork steaks that I served over shirataki noodles with mushrooms and snow peas for a quick meal.
