DESCRIPTION
Nothing to brighten a dreary winter’s day quite like Lemon Curd. I love to sneak it into every dessert I can. A dab here, a dab there makes everyday complete.

Before we ate keto, I would make Lemon Curd for Sam on days like today. Cold weather combined with overcast skies call for a bite of sunshine. It’s like a vacation in your mouth. Now, I make a sugar free, low carb version to layer with berries, almonds, and sweetened condensed milk in my Glass of Sunshine. When I’m feeling extra fancy, I serve it in a pretty stemmed glass. All the brightness with none of the bad stuff. That’s KetoLuxe.

INGREDIENTS
8 blueberries
4 raspberries
4 blackberries
1 tablespoon KetoLuxe Lemon Curd
1 tablespoon KetoLuxe Sweetened Condensed Milk
1 tablespoons sliced almonds


DIRECTIONS

  1. Place blueberries in a single layer in the bottom of glass.
  2. Add layer of raspberries.
  3. Add layer of blackberries
  4. Spoon on layer of Lemon Curd.
  5. Spoon on layer of Sweetened Condensed Milk.
  6. Top with sliced almonds.
  7. Serve immediately or chilled.

NOTES
I just happen to like these berries. You can use your favorites in any combination.

Having a dinner party? Make these that morning and store in the fridge. When ready for dessert, pull out and amaze your guests.

    Thank you for taking the time to read and comment on my recipe for a Glass of Sunshine. I’m curious as to why you would think this doesn’t follow keto way of eating guidelines? There are so many ways of eating keto that everyone must find one that works for them.

    This recipe is definitely within the keto guidelines for weight loss and health. I indulge on high cycle days. Here’s some information about how we do keto in my house and why. My wife and I have each lost over 75 pounds, now!

    At home, Sam and I follow the keto diet in 2 different ways. I am pretty strict and adhere to 75% fat, 20% protein, and 5% carbs (about 19 net a day). I still have a little more weight that I want to lose, so I keep my calories at a range to create that. Sam reached her weight loss goal last year and eats about 500 more calories a day than I do. She also became slightly hypoglycemic (after going into remission for her diabetes) and has to regulate her blood sugar more than I do. She now eats 60% fat. Sam keeps her net carbs around 50. NOTE: I eat keto for weight loss, and Sam eats keto to manage her blood sugar.

    So you see, these are 2 examples of the keto way of eating that are both correct. People who eat vegetarian keto or keto for controlling epilepsy also follow different versions.
