Burrata Pizza is a gourmet keto delight.

Burrata Pizza

Cheese and pizza go together like sunshine and kitties. I love all four. Yesterday, Sam and I went to the Hemingway House to see the polydactyl cats. It would have been perfect if we could have been in the sunshine with the kitties eating a cheese pizza. Nonetheless, it was still a good time. I know that when I’m back in Indiana with the snow I can have my Burrata Pizza. This recipe will be the first thing I make.

Growing up, pizza meant shredded mozzarella, sausage, and marinara atop a flour crust. Now that I’m an adult who eats keto, I’ve started exploring other options. When I discovered the beauty of scrumptious, creamy burrata served melty atop a crisp pizza crust, I saw lasers shooting from the eyes of kittens frolicking like on Sam’s favorite leggings. I still had to perfect Luxe Dough to make Burrata Pizza burst with sunshine in my heart. When I did, this Gluten free, sugar, free, and low carb recipe made me quiver with happiness. The addition of garlic cloves and fresh basil to top the marinara make it extra special.

Split the burrata while still warm for maxium ooziness.

Make Burrata Pizza anytime your grown-up taste buds crave a gourmet dinner. If you prep the Marvelous Marinara and Luxe Dough in advance, you’ll be almost done by the time you get to pizza night. I imagine Hemingway would serve it with rum and a garden salad. I know he would enjoy it with some kitties and sunshine. I’ll think of this trip when I am sitting next to my sunlamp with the Little Kitty.

Freshly ground black pepper

  1. Preheat oven to 425°F.
  2. Roll out Luxe Dough into a pizza crust shape between 2 pieces of parchment paper.
  3. Bake dough on a cookie sheet or pizza stone for about 6 minutes, until golden brown.

  8. Place ball of burrata in the center.
  9. Return pizza to oven and bake for 5 minutes.
  10. Remove from oven and immediately split burrata with a cross cut. Open up to spread across pizza.
  11. Sprinkle fresh basil everywhere.
  12. Drizzle with olive oil.
  13. Season with salt and pepper.
  14. Serve warm.

6 servings

Sometimes I put spinach or olives on the pizza to mix it up. Personalize your toppings to your taste.

If you can’t find burrata in the specialty cheese department, buffalo mozzarella is a decent replacement. Fresh mozzarella balls don’t ooze as much as I would like but are better than no mozzarella.
