Tsar Nicoulai Caviar is an epicurean delight. 

Formal Caviar Service

Eggs are really important to keto. While I’ve learned to eat eggs, there is one type that I love: caviar. They come from a crazy looking prehistoric fish called sturgeon. I got to spend the day hanging with these fish in the California sunshine at the Tsar Nicoulai caviar farm. There, the Mother, Sam, and I toured the property and learned all about the process of producing exquisite caviar. That was the inspiration for my recipe for Keto Caviar Service. My version is gluten free, sugar free, and low carb. I even drink it with vodka to keep it KetoLuxe.

Because of its delicate nature, Caviar should be served using either mother of pearl or wooden spoons. The mother gifted us with the ones I am using for our wedding. 

Tsar Nicoulai Caviar is what I'll be serving on New Year's Eve. What is your favorite party food? 

Formal Caviar Service with Zucchini Blini to replace buckwheat ones is my favorite. 

Less than 10 minutes

No cooking

1 2-ounce tin of good caviar. I suggest Tsar Nicoulai Estate
1 hardboiled egg, sliced
2 tablespoons crème fraiche
2 tablespoons capers
1 batch Zucchini Blini


  1. Fill a small glass dish with crushed ice in which to nestle caviar tin. 
  2. Arrange condiments and blini in small vessels.
  3. Place all items on a platter.
  4. Serve with mother of pearl or wooden spoons.
  5. Eat immediately. 

4 servings

Want more of a spread? Add more accompaniments such as chopped scallions and cornichon.

If you prefer, use Toasted Mug Bread instead of Zucchini Blini.

Use leftover caviar the next day in an omelette for an upgraded brunch experience.
