INGREDIENTS
3-inch piece of horseradish root, peeled
2 tablespoons water
2 tablespoon white vinegar, separated.
1 pinch salt
2 cups heavy white cream

DIRECTIONS

  1. Chop horseradish into ½ inch chunks.
  2. Place chunks, water, 1 tablespoon vinegar, and salt in food processor. Pulse until well ground and mixed.
  3. Strain out excess water.
  4. Add vinegar and pulse 10 seconds.
  5. In a stand mixer, beat whipping cream until stiff.
  6. Combine horseradish and whipped cream.
  7. Serve slightly chilled or at room temperature.

YIELD
12 servings

NOTES
Substitute prepared horseradish to save time. Remember, fresh has more of a bite than prepared.
