DESCRIPTION
When I was growing up in the 1970s, the Mother grew the produce for her Walnut Room restaurant. I would help her tend to the plants and pick the produce. How the stalks of asparagus would seem to jump up overnight was one of my favorite things to see in the garden. The Mother taught me that asparagus was meant to be eaten when cooked enough for just a slight crunch. I must admit that it was never a favorite flavor of mine when I was a kid. I just liked to see it grow.

As an adult, I’ve grown to appreciate asparagus. The keto diet (and most healthy eating plans) calls for a plate full of vegetables. My Pan-Charred Asparagus Salad fits the bill of having healthy fats and not overly cooked vegetables for flavor and nutrition. Gluten free, sugar free, and low carb, this recipe ticks all the boxes for a good side dish.


The secret to cooking asparagus properly is actually how it is stored. Chef Alexa cuts the tips off the asparagus stalks and puts them in about an inch of water to keep them crunchy when cooked. Make sure to store in the fridge so the tips don't open.

INGREDIENTS
1 tablespoon ghee
1 pound fresh asparagus, ends trimmed
½ cup grape tomatoes, halved
1 tablespoon white wine vinegar
1 tablespoon extra-virgin olive oil
¼ teaspoon Dijon mustard
¼ teaspoon KetoLuxe Magic Sprinkle Seasoning Blend
¼ cup pitted kalamata olives
¼ cup shaved Parmesan
1 tablespoon chopped fresh parsley

DIRECTIONS

  1. In a large sauté pan, heat ghee over medium-high temperature.
  2. Add asparagus and sauté until one side is slightly charred. Flip and repeat.
  3. Immediately remove asparagus and place on serving platter.
  4. Add tomatoes to ghee and char.
  5. Immediately remove from pan and sprinkle atop asparagus.
  6. Whisk together vinegar, olive oil, mustard, and KetoLuxe Magic Sprinkle Seasoning Blend
  7. Pour atop vegetables on platter.
  8. Top salad with kalamata olives, Parmesan, and parsley.
  9. Serve immediately or lightly chilled.

YIELD

NOTES
This is an easy dish to make a few hours before serving. Place in the fridge (either assembled or not).

Substitute olive oil for the ghee is desired.

Sam likes to add my Pancetta Croutons to this dish for extra crunch.
