If it is a cheese salad, that’s another story. Croutons, though, create a spectacular crunch with their texture. The word even sounds crunchy.

When we started to eat keto, Sam and I missed croutons A LOT. We experimented with toasted pepperoni and crisped cheeses. When we discovered Pancetta Croutons, our worlds became brighter. Finally, a crouton replacement that didn’t feel like a substitution.


Duck fat is the secret to crispy croutons. I use Maple Leaf Farms All Natural Rendered Duck Fat because it tastes best. You can order it online from their website.

Next time you make a salad, add some of these cubes of crispy meat. I like to use it in my Cauliflower Caesar. Or you can enjoy them as a snack on their own. You’ll enjoy them as an indulgence, not a pale substitution.

INGREDIENTS
¼ cup duck fat
4 ounces pancetta, diced

DIRECTIONS

  1. In a medium skillet, saute pancetta in the duck fat over medium heat, stirring constantly until pancetta is crispy.
  2. Remove pancetta from skillet and drain on a paper towel.
  3. Serve immediately at room temperature.

NOTES
You can make these in advance and store for a week in sealed container at room temperature.
