KETO LEMON ICING

DESCRIPTION
There’s a reason for the phrase “the icing on the cake.” Icing makes a good thing like cake or bread even better. When that icing doesn’t have refined sugar, it is even better. Use my keto icing on Lemon Glazed Blueberry Bread, cinnamon rolls, pound cake, or any sweet dessert that just needs a finishing touch.

For zesting lemons, I like to use a cheese grater so that I can control the amount of pith. Make sure to leave the bitter white part on the lemon.

INGREDIENTS
2 tablespoons powdered erythritol
1 tablespoon butter
1 tablespoon heavy whipping cream
1 teaspoon Pure Vanilla Bean Extract 
1 teaspoon lemon zest

DIRECTIONS

  1. Combine all ingredients in a medium sauce pan.
  2. Constantly whisking, bring to a rolling boil. 
  3. Remove from heat and pour over the dessert of your choice.

NOTES
Want a different flavor? Substitute lavender blossoms, orange peel, or a vanilla bean for the lemon zest.
