Pure Vanilla Bean Extract
Pure Vanilla Bean Extract is one of those pantry items that is super easy to make. However, it requires some pre-planning. The reward of Pure Vanilla Bean Extract makes all that worth it: real flavor that keeps on giving. To my mother batch, I just add some more alcohol whenever about half is used. This saves a on of money and lets me control the ingredients. Many people don’t realize that most vanilla extract is cut with water and amped up with sugar. My version is sugar free, gluten free, and low carb.
Splitting the bean helps the alcohol absorb the flavor quicker and gives it a more rich and full flavor.

Less than 5 minutes
2 vanilla beans
4 ounces 80-proof or greater vodka
- Split vanilla beans lengthwise and place in bottle.
- Pour vodka in bottle.
- Seal bottle and place in closet for 3 months.
- When the bottle is half empty, add more vodka.
As much as you need
You can add more vanilla beans to amp up the flavor.
Sometimes, I use bourbon or rum to give a little different flavor profile.
These make great gifts. Just make in a pretty bottle.
