For Fat Tuesday, one of my regular catering customers requested jambalaya. Since I knew Sam would be jealous of them, I made this Cauliflower Jambalaya for her. Even though we all know how she feels about cauliflower rice, she approves of this low carb, gluten free, and sugar free recipe. She also says that she’s going to work on a keto hurricane for us to enjoy with it.
For my Artisan Foodworks catering business, I only use chicken thighs for kabobs. Unlike white meat, they stay deliciously moist and tender. Customers comment over and over again about how delicious my Cajun Chicken Kabobs taste. For this recipe, I didn’t have to make any changes for it to be keto.
