    When we started eating keto, Sam cleaned out the pantry of all the foods we no longer wanted to eat. I believe she gave 7 boxes of noodles to our neighbor. We thought our days of a quick meal were done. One night when we especially tired and craving comfort food, I suggested we have spaghetti sauce without the pasta. Spaghettiless was born.

    I don’t think I know anyone who doesn’t eat catsup. If I do, they’re not American. I understand that it is a favorite in the White House to be served on well-done steak (insert bald eagle noises here). A staple condiment, it can be found on everything from a quick breakfast to a late-night snack. My version, Heirloom Tomato Catsup, combines gourmet ingredients while maintaining the familiar tang. My simple, fast recipe is gluten free, sugar free, and low carb. I use it in things like Bison and Pork Meatloaf and Zesty Cocktail Sauce. You can also put it on All American favorites like scrambled eggs, hot dogs, and hamburgers. The versatility makes this condiment KetoLuxe.
  • KETO GOAT CHEESE AND CAULIFLOWER MASH UP

    For the keto way of eating, mashed cauliflower is a staple side dish. While I don’t find cauliflower objectionable, mashed cauliflower can only be described in one word: gross. Using my chef-sense, I realized that goat cheese could add the missing flavor and texture to make it good. My Goat Cheese and Cauliflower Mash Up recipe is still low carb, sugar free, and gluten free. It just tastes better.
  • KETO RACK OF LAMB

    Because it is so easy to prepare, I made a keto version of Rack of Lamb as soon as we started this way of eating. Even better, the change to almond flour from bread crumbs to make the crust was simple and tasty. Sugar free, gluten free, and low carb, this recipe is once again one of the most popular dishes in my home.
