  • KETO LEMON CURD

When we started eating keto, many of her favorite things were no longer an option for me to prepare for her. What’s a chef to do? I quickly came up with my own recipe for Keto Lemon Curd. Thanks to KetoLuxe Allulose, I was able to keep Sam happy with her favorite flavor and scent. My recipe is sugar free, grain free, and low carb
  • KETO SHIKANJI

When we started eating keto, I thought I had to give up one of my favorite beverage groups. But no! I just had to find a work around. Little did I know I would actually discover an improvement to make them even better. The other day, I came across a new to me drink thanks to a Bon Apetit article about Priya Krishna’s new cookbook Indian-ish. I adapted her Shikanji recipe by using my KetoLuxe Allulose and Real Salt pink salt to make it ketolicious. While still a treat, my version of Shikanji provides essential electrolytes to avoid those nasty leg cramps. Sam thinks we should add vodka…
  • KETO CRUDITES WITH RANCH DIP

Especially with the keto way of eating, raw vegetables and dip are an important part of a healthy celebration. The tasty combination of fat, nutrients, and fiber help keep us fit and satisfied. The only problem with our old way of making Crudités with Ranch Dip is that many of the dips contain fillers and stabilizers. Sugars, guar gum, and other fillers just don’t fit into it. That’s why I created my KetoLuxe Ranch Seasoning Blend (the secret ingredient in this dish) to be free from them and to be soy free, gluten free, and grain free.
  • KETO DUCK BURGERS WITH GOAT CHEESE

When making duck burgers, it is important to have a binder (actually having a binder for beef hamburgers is a secret of many restaurants) to help hold the meat together. Before I ate keto, I would use bread crumbs or panko in mine. Now, I include crushed pork rinds to make the patties. I incorporate my KetoLuxe Hunter’s Seasoning Blend so that I know they are gluten free, corn free, low carb, and delicious. I like to top my Duck Burgers with Goat Cheese, too. Medium-rare is my temperature of choice for doneness.
  • KETO CHESAPEAKE BAY STEAMED SHRIMP

Healthy keto eating includes a lot of seafood. Actually, I think most healthy diets should involve seafood. Although it can be difficult in our land-locked state to find a variety of fresh fish, it is easy to vary the preparation and ingredients. My KetoLuxe Chesapeake Bay Seasoning was created for Steamed Blue Crabs and Creamy Crab Dip. However, it works just as well to liven up Steamed Shrimp. Serve it with Zesty Cocktail Sauce for a fun appetizer. Garnish with lemon for a little low carb citrus flavor.
  • KETO MINT JULEP

Here we are, almost 20 years later. While a lot has changed since then, I still enjoy a Mint Julep. Thanks to the Mother’s technique, the recipe is streamlined to make it easier and tastier: no need to muddle the mint. The substitution of KetoLuxe Allulose for cane sugar makes the cocktail even tastier. Because Sam loves mint, we grow pots of it year-round for extra fresh taste.
  • KETO FOIE GRAS WITH BALSAMIC

As an adult, I’ve started eating keto. Luckily for me, foie gras is basically a fat bomb of high fat with moderate protein. I didn’t have to give up the sybaritic pleasure of Foie Gras with Balsamic in my new way of eating. While I used to pair foie gras with elaborate sweet compotes, I now stick with the simpler but more luxurious combination of good balsamic vinegar accentuating the flavors of the liver. This recipe omits the filler of bread, which usually accompanies it to stretch out the dish, making it gluten free and low carb.
  • KETO BARBECUE BABY BACK RIBS

When we started eating keto, I bought several varieties of sugar free barbecue sauce to slather on ribs. None of them satisfied the craving for smoky, sweet, and tangy goodness. So, I started cooking. My recipe for Barbecue Baby Back Ribs uses my KetoLuxe Barbecue Seasoning Blend for depth of flavor and my KetoLuxe Sweet and Tangy Barbecue Sauce for the finishing touch. Gluten free, sugar free, and low carb, everyone I’ve served this to has asked for seconds.
  • KETO PAN-CHARRED ASPARAGUS SALAD

As an adult, I’ve grown to appreciate asparagus. The keto diet (and most healthy eating plans) calls for a plate full of vegetables. My Pan-Charred Asparagus Salad fits the bill of having healthy fats and not overly cooked vegetables for flavor and nutrition. Gluten free, sugar free, and low carb, this recipe ticks all the boxes for a good side dish.
  • KETO TACO LETTUCE CUPS

Before we ate keto, we often had an assortment of corn and flour tortillas (or chips for freeform ones). Now, I use lettuce cups or serve taco salad for my Taco Tuesday meals. Today, I’m serving Taco Lettuce Cups to celebrate one of my favorite meals of the week. Gluten free, sugar free, and low carb, my KetoLuxe Taco Seasoning Blend and crunchy lettuce are the secret ingredients in today’s recipe.
  • KETO CANDIED BACON ON A STICK

My Artisan Foodworks catering customers love Candied Bacon on a Stick. At least 75% of the events Artisan Foodworks caters serve it as an appetizer. Since many people ask me for the original recipe I included it in the Hoosier Harvest Cookbook.
  • KETO ZUCCHINI BLINI

This year, an overwhelming majority of my clients have requested that dishes be keto friendly. I created Zucchini Blini to accommodate the gluten free, sugar free, and low carb diets that are popular these days. While this recipe doesn’t technically make blini because it doesn’t have yeast, I ask: Who can resist the assonance?
